Is the Richmond hamon a Single bevel or double?. I'm looking for a knife to break down tuna loins and to cut rolls, sashimi, nigiri. Or should I look at the kohetsu gyuto. I know they have two different profiles. Budget ceiling is 200. Thanks in advance.

CLIOU <> The Hamon is double-bevel, and it is a heavy knife... unlike the thin light quasi-laser Kohetsu. I would prefer the Hamon in your application ONLY due to profile.
