I am interested in buying a new gyuto and am torn between two, your new damascus Richmond and the hokiyama sakon, could you give me some advice and more info...selling points on the two, thanks

Both of these knives are really nice looking knives. They both have similar handles and steel performnce is both good on both knives. I like the grinds on my Richmond Damascus better. I like the Hokiyama damascus pattern a little more. I honestly haven't used them enough yet to tell you how well or easy they sharpen yet.
