Thanks to everyone for their thoughtful recommendations. I appreciate it very much.
I am most likely going with the Tojiro DP for the newbie knives I need to purchase.
As for a gyuto for myself for commercial use, I have not quite made up my mind, though I'm sure it will be from one of the recommendations. I'll update this post when I make my decision and use the knife for a little while.

The Tojiro DP is an excellent choice. The only thing it needs OOTB is some sandpaper taken to the choil and spine near the bolster to round the sharp edges just slightly. It only takes a few minutes per knife and it's really easy to do. I use 220 for the shaping, followed by 400 to smooth the finish a bit. I have the DP 210 and I think it's just a really great all-around knife.

For the 1st choice, if you aren't having issues with what you use now, I would say wait for the HAP40 knives to arrive. For the second recommendation it does depend on what your budget is to spend, if it's in your budget I'd suggest looking at the Richmond Artifex, which is probably the next knife up from Victorinox in cost, but is a lot nicer of a steel. My first kitchen knife was a fibrox victorinox and I still use it for the things I know I shouldn't use one of my J-knives for, the steel takes an alright edge and does hold it decently well. It is a step up from no name kitchen knives, tho I don't know how it stands next like a henckles or other similarly priced knives.

The Artifex can be a good knife but it too needs work OOTB. It is VERY thick behind the edge and needs to be thinned to be a good cutter.
