I noticed Mark did 2 videos measuring some knives on YouTube.
Could you (Mark) measure the Konosuke 240mm gyuto's? I'd like to see if all 240mm gyuto's have the same measurements as the $206.00 Ho Wood handled version. Does the ebony handled HD 240mm have the exact same sub-2mm spine measurements? I think the HH 240mm gyuto is actually a hair thicker at 2.3mm (heel).

Mark. If you could only measure the 240mm gyutos from the HD line (the "new" versions w and w/o ebony handles). I'm assuming all 240mm HD gyuto's share the exact same measurements (e.g. 1.97mm at the heel). True?

The ebony handled HD 240 that I just picked up measured 2.35mm at the spine/heel. The blades should be all the same regardless of handle. That said I've seen minor variations from batch to batch on them. Also, there are slight differences in thickness based on where exactly the measurement is taken. I'll update the site specs to reflect this current knife.

Ok thanks Mark. It's just that I noticed that one 240mm you listed as being 1.97mm at the heel. I wondered if ALL HD 240mm were the same. But as you said it might have only been that batch of "regular wood" handled 240mm. Might partly explain why they sold out.
2.3mm is still "thin". And for home cooks it's not going to matter that much whether it's 2mm or 2.3 or 2.88 (Kono Fujiyama gyuto's).

I had a bad caliper a couple of years ago and I'm wondering if the measurement was off back then because of that. Or it could be a slight thickness adjustment from the factory. They may have beefed them up a tad to make them a little more robust. I'm not sure.

Welp whatever the anomaly was who ever buys an HD will be buying from the "current" batch. 2.3mm or not.
