This is a quick video of me slicing some paper towels with a reground Tojiro ITK 210mm gyuto. The edge isn't super fresh; I cut some veggies with it, and decided to slice some paper towels after I hit it quickly with one of my laminate strops. I'll see if I can get some better videos soon. I really thinned this sucker down and it cuts like crazy. I'm going to see if the edge can hold up though, may be too thin!
Gotta hit the store tomorrow to get food to cut up. This sucker is ridiculous, I will get some measurements tomorrow. I did a full convex ground from spine to edge; before, it was flat near the spine and then 1/3 of the blade was convexed. Now, it's convexed from edge to spine; the spine is much thinner than before and the edge is even thinner than the first re grind!
