Ok, I'm hooked. Completely loving the new knife, but after dicing up a butternut squash for some homemade soup today, I can see it needs to be convexed. I know there are a few guys on here that are plenty capable of doing the work, just wondering what it costs and if any of you have recommendations for who to send it to?

UMMM....just realized the typo...should have been Hiromoto AS...too much red wine tonight.

Fixed the typo for you, and I can convex the knife for you if you like. I'll PM you for details.

Thanks Shaun. The wife's first question was....you really want to do that to a new knife?
Sun Mar 24, 2013 10:32 pm
Well... I think the question is; do you want a laser or not?
Okay, sorry, I had to! haha

Just so everyone else knows, I'm going to be offering a thinning/refinishing service on Hiromotos very shortly. Same price for the either a 210 or a 240, $50, and an extra 10 for anything over 240.
This includes making the convex grind better, thinning it behind the edge, re-etching the cladding line, polishing, and sharpening. The knife performs much better with this upgrade and looks like it came from the factory when it's done. I believe we should start offering this service on the website shortly, have to as Mark again to confirm.

Oh yes, we are going to offer this service on the website shortly, and I am offering this service right now if you want to ship me the knife. $50 for everything, and that includes over an hour of grinding and polishing alone.
