Sat Sep 22, 2012 10:06 pm

Hi everyone, now I want to buy some filet knives into my knife set. The question is what is the best filet knives in your opinions which worth your money the most?. I have some choices in my mind already which are http://www.chefknivestogo.com/shclgobokn6n.html (Shun) and http://www.chefknivestogo.com/todpbokn15.html (Tojiro) any recommendations would be great if you think it's better.

Thank you very much.

How much will you be using the fillet knife? I tend to buy based on usage but sometimes just because I want a knife! Anyone know how flexible the Tojiro is?

Those are both boning knives?? Most boning knives don't have much flex to them; they will flex a little, but not like a fillet knife.

What size fish are you filleting? I usually use a Deba for fish; I have a 155mm SS Tojiro for inshore species and a large, 240mm Mioroshi Deba for Tuna, mahi, etc.

Mark is working on an Artifex fillet knife in AEB-L.

Agreed with a little bit of practice the deba becomes very efficient and much easier to use.
