With all the knives slinging around here, there has to be some cooking! Here is one of my recent meals:
kombu wrapped 16hr 56C short ribs / puffed short grain rice / flash fried broccoli / mushroom and beef broth / fish sauce

The ideas come from pretty much anywhere. Research and development is a mixed bag. It can happen at the restaurant I'm currently working at (or staging, the current gig) or at home. Wherever can support the idea, really.

I spent a year in Houston, then moved on to Chicago for a few months. Now I just accepted a new job back in Houston, so I'll be on my way back there shortly.

I love Chicago, one of my favorite cities in the country with a great food scene. I had some awesome offers in Chicago, but got a better opportunity back in Texas which works out better with my current situation.
