The owner of the hotel I'm interning at came in for dinner.
He's vegetarian, I had 3 hours notice to come up with a special for him.

Here we have porcini stuffed ravioli, sauteed in brown butter, along with brussel sprouts, blanched and also in the brown butter.
On top of a butternut squash and honey puree.

The salad is frisee with roasted butternut squash chunks, cranberry vinaigrette, candied walnuts, goats cheese.

Very nice! I'm not huge on vegetarian dishes but I'd certainly do that. :)

Did the owner enjoy it? The combinations of flavors look good. I don't know if I would have speared the ravioli with rosemary. What was the filling for the ravioli?
