Hey Steve, what are your thoughts on similar/contrasting features of the Yuki and Kanehiro (aside from steel)? Been eyeing a Shimo as rehandle candidate for next knife once I develop my sharpening skills, but that was mainly b/c the Yuki is out of stock in 240MM

Chip - I think the biggest difference between the two is ergonomics. The Masakage's have their signature curved choil/neck tailored to a pinch grip. The Kanehiro has a more traditional emoto shape - not a bad thing, just different than the Yuki. Between my Yuki and the Kanehiro (210's) I had to test, the Kanehiro had a thinner tip that went through product better. It's a VERY nice knife. To be honest, I like the all stainless aspect of the Kanehiro Ginsan series - just sayin' ;-). They're more expensive than the Yuki series, but I think they are worth the extra coin. These were not 240's, so YMMV on those. The Shimo series are VERY nice as well, slightly lighter and thinner overall than the Yuki series, but they're fully reactive, cladding and all - just so you know. I like the Shimo and Koichi handles a little more than the Yuki handles. I don't think a Kanehiro or Shimo needs a re-handle, just my opinion - they have classic looking/feeling handles that work very well. If you just must have extra bling or fancy woods, etc. then go for it, but I'd use either one a good while and see what you think of the stock handle.

Just to add, on my 210 samples, the Kanehiro had more of a continuous curve type of edge profile. My Yuki has a bit more of a flat section at the heel - not a ton of difference, but you can feel it on the board between the two.

Steve, thanks for the tremendous run down! Will keep that all in mind when the time comes to pull the trigger. I don't mind reactive metal as I'm pretty anal about drying and cleaning my blades and think a natural patina looks pretty nice. In terms of rehandle, I actually very much prefer western handles, but, as I discussed in another topic, I think it may be worth spending some time with traditional Japanese handles as westernizing every gyuto I buy from here on out could get a little pricey :D

Chip, I've read you comments and reasons for your preferences. I think the Masakage's might not be the right shape at the neck/choil for you. They are truly tailored for a pinch grip and don't work well IMO for a Western racket style grip. I wouldn't fight it too hard on the Wa/Yo aspect, trying to make Yo knives from Wa designs. You might find octagonal Wa handles more to your liking, since they have those harder angles built into the handle shape. Also, I'd look for knives w/o a long neck (emoto) to get a compromise in ergonomics between your two main grip styles. You'll sacrifice a little space for a pinch grip for better racket grip ergonomics. I think the Kanehiro shape at the neck/choil/handle would suit you pretty well. Kanehiro also makes a great AS steel line as well :-).

Sorry Steve, last question: Been reading some phenomenal reviews of Konosuke knives. Noticed the Fujiwama White #1 Damascus is available w/out a blade and appears to have a shorter neck profile. Do you think this blade might be a decent candidate?

Chip, if you're talking about this one: http://www.chefknivestogo.com/kofuwh1da240.html, yes that might be a good candidate purely from the ergonomics perspective I've been mentioning. Whether it's the right knife for you with regards to length, steel, etc. is another matter. That IS a really nice blade, though :-).

Besides a shorter emoto, I'd also look for a wider neck as well, one that's about the same width as the handle diameter. That Kono looks to have this (from the photo). I think that might also help give you a little more Western feel to the handle/neck/choil area of a knife.

From the list above, check out the videos on the Kohetsu B#2 Nashiji Gyuto 210 versus the Santoku or Nakiri. You'll see a good example of narrower vs. wider necks.

May not be the right steel at the moment (or near future), but it is just so hard to get my hands on any comparable knives. Korin is around the corner, but they have a pretty limited selection compared to CKTG and not sure if they would be thrilled with me bringing in a few pounds of produce to put their knives through with no intention of purchasing :D Thanks again for the thoughts. You've been super helpful in understanding what I'm going to be looking for and pointing me in the right direction!
