I was cutting grape tomatoes today with a recently sharpened Tojiro 120mm petty and noticed that on a 'push' stroke, the knife wouldn't cut the skin without some pressure but on a 'pull' stroke it practically fell through. Any idea what would cause this? I'm guessing the scratch pattern but really have no clue. Just looking to satisfy my curiosity and figured I'd ask some of you experienced 'cutters' :)

Thanks!

Chris

It may be the way the teeth/scratch pattern are aligned on the knife at the edge itself maybe? Do you sharpen with the blade at an angle to the stone or perpendicular to it?

That's what I thought as well. Looking back, I never actually finished sharpening it. It was 'sharp enough' to hang back up but I ran out of time. Tim, I usually start perpendicular and in sections then make the final passes as full sweeps at about a 45 degree angle to the stone. I took it back to the green brick this afternoon, stropped it a little afterward and all is well :) Thanks everyone!
