 Post subject: Question about grinds and hand made knives

When looking at stainless-clad blades, there are three levels of exposed steel. The top near the spine, the middle matte section which is usually where the convex starts to drop sharply, and then the edge. From the videos ive seen, it appears as if the convex starts to taper sharply right where the top and middle section meet. With hand-finished knives, I ve seen this area differ slightly on either side of the blade. So, on one side, the middle section is a few mm higher than the other side. So if my observations are correct, and the convex starts to taper at this point, those knives would have a higher taper-point on one side. Now since I ve noticed this mostly the forward part of the blade maybe it doesn’t matter, but technically, since the taper is uneven side-to-side, would it ever be issue?

As I understand it an asymmetric grind is to better suit for LH or RH use
