The Hardness is 61 Rockwell, The thickest part of the spine over the heel is 2.4mm, weight is right around 190 grams, and height over the heel is 48 millimeters. Each blade is being sharpened with a 15 degree edge.
Another note: This steel is incredibly tough (s35VN). I've gone through small bones (chicken breast/ribs) and had zero chipping, then banged it into the board (maple) extremely hard for 30 seconds straight, the edge was still perfect. Corrosion resistance in incredible also, I believe it would take a lot to even discolor this stuff. Sharpening characteristics are top notch: Performs more like a good carbon than stainless.
