 Post subject: Want to try carbon steel (affordable)

So I'd like to buy a carbon steel knife but dont want to spend to much $ incase my coworkers don't respect cleaning and drying of my new knife. I'm looking at the Tojiro shirogami itk 240mm wa., or the Fujiwara fkh carbon 240 mm. Can someone help me make a decision that has expierience with each of these knives? Right now I currently use a myabi kaizen 8in wa. And a wustoff pro 10 in. I want a 240mm because its in the middle of the 2. I like the finesse of the way handle but I like the comfort of a western handle. Pleas Help lol!

Fujiwara hands down over the Tojiro Shirogami. The Tojiro has a Kurouchi finish that tends to wipe off fairly easily. The Fujiwara has a much thinner grind based on what I saw from a 210mm Tojiro Shirogami gyuto I had. The Tojiro has good steel, but is a bit thick above the grind for me. The Fujiwara's I have seen have been thinner and a nicer grind/finish IMHO and the handle F&F has been excellent, but the steel is a touch softer than the Tojiro's.

Yeah, of the two I'd have to go with the Fujiwara as well.

Fujiwara for me too unless your have your heart set on a wa gyuto.
