Does longer sharpening time equate (more or less) to longer edge holding ability? Or a "better" edge? Do you have any pics of what you're describing with the aluminum tubing? Are there any instructional videos how to do this?

Generally, yes. The harder and more wear resistant the steel, the longer it should hold an edge is a general idea, but it is balanced by the useage, what you are cutting on for a board, if you are hitting bones and getting chips, etc.
