What pen do you use to write on the back of the EP plates? I tried Sharpies, but they just wash off :(

Cover what you write with the Sharpie with a piece of cellophane tape.

A follow up for you, I didn't have it in front of me at the time but the Dymo label maker I have is called a Letratag. Mine is pretty old, but the plastic label tape works great on the EP stone holders. Amazon has a new one for less than $30, it will come handy for a lot stuff you'll find. Brother also makes a similar label maker.

I use it for marking my strop pads too, type of leather and the grit size spray on them.

Permanent marker is a good idea and easy.
