"What next" is something I think about a lot. I'm guessing you guys can tell this by now....:)

I want to keep building out our Artifex line and I need some guidance as to what knife we should work on next.

If you haven't checked here is what is now available:

90mm Petty
165mm Honesuki
170mm Nakiri
210mm Gyuto
240mm Gyuto
270mm Suji
270mm Bread
270mm Scimitar

What should be my next knife?

unless you want to create a new knife style, why not just refine what you have to the needs of your customers? I personally would like more handle options. your selection overall and service are top notch, so just improve what you already offer. Just my thoughts...

First off, I love what you have been doing Mark and I plan to buy one of each of the Artifex kinives I don't already have.
I would like a version of a granton slicer that for some reason no one makes any more but I use often to slice salmon for gravlax, prime rib roast and so on. A cleaver would be cool also. Or maybe it doesn't have to be a knife; maybe a nice bayonet fork.
