 Post subject: Which Nakiri?

I have decided on a nikiri for my first purchase from CKTG. However, since I am just a home cook. I don't want to spend a lot on my first knife. The reason being if I mess it up by usage/sharpening I won't feel so bad. CKTG has so many choices it's really hard. I'm trying to stay in the $100.00 range for this first purchase. I am looking at the Dojo Hayashi and the Moritaka Aogami. I am open to any suggestions/advice anyone would be kind enough to offer. Thanks for any help.

I have the Tanaka Blue #2 Kurouchi Nakiri and love it. I also have a Fujiwara Terayasu Nashiji Nakiri (white #1 clad in stainless) and a Tojiro Shirogami Kurouchi Nakiri. All work well, but the Tanaka is my favorite. I may pick up one of the Sekiso Nakiri's as well from Tanaka.

Try the Moritaka. It's a great little knife and aogami super steel is an excellent steel. The grinds on the knife are far superior to the Dojo so if you're ok with the wa octagonal handle I think I would go with that: http://www.chefknivestogo.com/moritaka1.html
