How do these Yamashins compare to the Tojiros? There is not a big dollar difference, however, with the tanakas not to far away, am i better off sticking with the seasoned veterans (Tojiro)? Or is it worth my curiosity to take a chance with the Yamashin, or just save my pennies for the Tanaka?

Is this just a game of handles and F&F?

Looks like they aren't in stock yet. I have a Tanaka Kurouchi Blue #2 Nakiri and a Tojiro Shirogami Kurouchi nakiri. I like the Tanaka since it is a bit thinner overall and lighter weight wise. The Tojiro had a smoother blade finish and the Tanaka was a bit rougher, but still nice. The price on the Tanaka Nakiri went way up ($85 now), which kinda sucks. The way the blade bevel (blade road) looks, it looks very close to the Tojiros and my guess is the handles will be similar as well. I also have a Tanaka Sekiso Gyuto and it's my go to gyuto now!

Id take a chance on yamashin, if you can wait.
If your in a hurry, with a little work the tojiro (itk) will be a joy.

Also wondering if the yamashin funayuki is just the funayuki shape or if it has a thick spine and is heavyer.

These are a big step up from the Tojiros and they're new to the US market as soon as my first order arrives. I think you guys are going to be impressed with them. I'll put specs up on the funayuki when I get it. I'm under the impression it's a real funayuki so it should be a bit thicker and one sided but I haven't seen that knife yet. I only had a chance to use the gyuto and the santoku.

The Yamashin seem a bit more refined in terms of the grind and I liked the Ku finish on the Yamashin a little better. Handles maybe about the same, but stock handles don't usually last long on my knives!

I have an ITK and if i had to do it again, I would have gone with the yamashin.

The ITK has the most reactive cladding on any knife i have ever used or seen.
