This really looks like an excellent design - applicable in any environment where theft is a concern from soup kitchens to high school home economics classes etc. Even teaching small children basic knife skills.

An extreme example of a task specific edge.

Of course, keep the 24 grit stones out of the kitchens for 'tip repairs' :)

Can't wait to see the first review from an inmate :)
