I've been saving my tips so it's knife buying time again. I have some good ideas on what I'm going to get, but I'd still like to workshop this.
I'm looking for a gyuto to be used for most everything. Something in the light to medium weight class with a comparable thickness. Ease of sharpening is more important than stain resistance, so either easy to sharpen stainless or a carbon clad or carbon steel. Carbon no longer intimidates me like it once did, but I do not want a kurouchi finish. I have a slight preference for a wa handle for this knife for the weight, but I generally find handles less important than most people so Western handles would be fine if anyone had such a suggestion. I have a hard limit of $200 with no problems going under that if a knife is worth considering; that's what I could convince my wife to allow. In terms of height I don't want anything super tall, but something a bit less tall would be fine. Under 52mm, not really a minimum height. In terms of length I would like to hit 240mm at least, but somewhat longer would be preferable. And I still know how to sharpen.
I mostly just want to workshop this and get some direct comparative feedback. This is mostly in the interest of making sure I didn't miss anything. Knives I'm considering:
-Kohetsu AS 240mm
: The early leader and the knife I would buy right now without this discussion. 245mm in length, a bit thin but still with some shoulders, and a hard, easy to sharpen steel.
-Tanaka Ginsan 240/270mm
: Fairly close to ideal, but I've read questionable things about this handle. That said, with the saved cash I'm halfway to a nice rehandle. The 270mm is of course a bit longer and taller than I was considering, but the height fits the length well. The 240mm would be in consideration, but it's out of stock and they are still a bit tall. The 270mm is my current runner up.
-Sukenari Ginsan 240mm
: Also fairly close to ideal, but I've read questionable things about this handle too. Still not a deal breaker, but it's a consideration. Shorter than I really would like.
-Kohetsu Blue #2 240mm
: I've been looking at this knife as long as it's been out, but the handle sets me back. Steve specifically mentioned it's a bit blocky and I really don't want that in this particular purchase; besides that, I'm feeling drawn to the 210mm version for a later purchase.
As always I welcome additional suggestions.
