Yep...that's why I made the comment.
Jeff.....I did see that he had asked for Gyoto recommendations....but was made curious by his need to cut fish and rolls.

I read his query as looking for a gyuto that won't be horrible as a slicer. The Shimo has a seriously flat edge profile which is why I recommended it, but the grind may be too convex.

So do you think the Kono HD2 Kiritsuki/Gyuto 270mm might be something worth considering?
