Hey guys. Well, after a long few weeks of work was finally able to get a head of the sharpening game and shoot a few videos. Tojiro Damascus 180, Tojiro prototype blue steel kiritsuke 240 and last the Kono HD 240. Enjoy.

can you tell the difference between the two steels. the blue steel and the damascus style knife (whatever steel they used)
like is it a heavier steel ?

Sorry for taking so long to get back to you. But I'll weight them tomorrow and let you know. But they aren't the same size. The Blue is a 240 while the Tojiro is only a 180mm. But for such a small knife I think it weights in the 7 ounces or there abouts, so not a light weight.

Hmm. Well of the three would have to go with the Tojiro blue carbon. I am a carbon junkie and do like the flatness the Kiritsuke offers, only thing is that it's very reactive. The HD is a very close second, the tojiro blue gets sharper and has better retention if you ask me.

They are all nice looking knives. I was thinking about getting a Kiritsuke but didn't know if I would like it more than a gyuto. I really like the look of the HD.
