Steve thanks a lot for your review, it´s been pretty detailed. That explain why there isn´t as much information as you would think about kaneshiges stainless.
As Dan did, im planning to buy 2 or 3 knives as upgrades for my sous. As house/prize knives. So as much as I do prefer wa handles myself, I prefer a "user friendly" knife. And as I am the one who sharpens the rest knives it would be directly better for me also.
JeffB: that´s really weird. I remember every knife I´ve own. And I´m sure I would remember if have had more.
btm: Same experience with the richmond wa than with the kaneshige: not as much as reviews or good words as with the Tojiros and fujis
