The chicken is actually deboned quail, lightly cured and wrapped in its own skin. Cooked sous vide, then fried. The mimosa is clarified strawberry and orange juice gel cubes and a sparkling wine fluid gel. The waffle is a waffle puree passed through a whipping siphon and a maple caramel crisp.

A few recent meals. As a note, everything I post is cooked and meant to be eaten. No extra steps are taken that would reduce quality of the dish to make the picture look better. Food first, picture second.

Shrimp scampi

monkey bread french toast, brown butter solids, peaches and cream, bruleed bourbon candied peaches

pulled noodles, pickled mushroom, ox tail broth, quail egg, bok choy

red long beans, okra, eggplant, queen snapper, tomato jam, browned vadouvan butter

Starting at the top left and going row by row: Genoa, peperone, antelope, sant'olcese, campagnia, saucisson sec, bison hunter, bison bresaola (yes, I made all of these)

45 day dry aged pork, xo pearl barley risotto, tomato confit, kale chips, broccoli crusted quail egg

tea cured duck breast, fried milk, pickled shallot, marcona puree, roasted lemon and honey sauce
