I love this maker. When I found out he was offering his knives in Ginsanko 3 steel I had to have them. http://www.chefknivestogo.com/kanehiro.html

MARK <> Just got back in town & saw you listed these. "Double-layered".?! Two G3's, or G3 over AOS?

Would you mind elaborating a bit, please?

GUDIS <> http://www.chefknivestogo.com/ginsankosteel.html

MARK <> I figured they are san-mai from the "double-layer" description, but two layers of the same steel is how the description reads & I don't think that's the case. Do they harden a G3 hagane to higher Rc & then laminate with a softer G3 jigane? I can't imagine so, but I can imagine that the core steel would be listed & since it is not... I am left with this lingering question. :|

MARK <> Furthermore, do they share the same dimensions & profile as their stainless clad AOS brethren?

JP <> Mark responded via listing update. Bear in mind, there will be dimensional variance.
