I have anxiously awaited a 240 Shigefusa or Kato, of which has still not restocked, since its selling out in November. Also, I had committed to buying either a Nubutama 240 or 270 if when they finally restocked 5 weeks ago - one fit my statistical parameters - as I had allocated enough financing for either one before my Palm Beach season ended. The Shigs never came & the Nubutama 240 was too short & the 270 was too tall. So I drop my load on a smattering of other steel, I leave to go work up North, and then after I buy all the other filler stuff, I see the Nubutama 270 was sold and replaced with another in MY PERFECT SIZE 255x51. BUT I CAN'T FINANCE IT TILL NEXT SEASON! :evil:

He's always got us played on the hook. :|

Not that I could appreciate the knife (or considering buying one until I could. Which may be never), but those Nubutamas look some badass blades. What is the skinny on that black steel?

Mel, question for you. Aside from the collecting/ connoisseur-ship aspect of accumulating so many different blades of similar proportions, do you find yourself using them all fairly regularly? More specifically, (and I'm pulling these examples out of thin air) why would someone own both a konosuke HD and a Migaki R2 in 210? Sure, one is HD steel and one is PM, but would owning both really add that much in terms of versatility in the kitchen?
