I agree. I haven't tried a lot of knives, and I'm dying to try more, but if I had to do it all over again, I would absolutely start with a Kono, despite my interest in trying so, so many others....

In terms of maintenance, I also think the Kono is likely to be "easier" than the Moritaka. Not that I think the Moritaka would be lots of work or anything. The Konos are just so very easy and wonderful in so many ways...to me, they are the epitome of low maintenance: easy to clean, easy to sharpen, easy to touch-up, hard to stain, durable, etc. Then again, I like to think about my cuts...if you like to chop quick and hammer away, the Kono may require a bit more attention...which would feel like maintenance to some, I'm sure!

That said, the Moritaka is – by most accounts – a real beast, with great steel. I can imagine preferring this in a professional setting: the added length, weight, power, thickness, and edge retention (??) would probably make this feel tougher all around.

I'm sure this isn't helping...so I'll stop!

The Kono was my 2nd knife and is still my favorite. I have several good knives that I really like but this knife has some magic in it.
