UX10 is great, but not worth the price tag now IMO. Same with nenox. Though theres something with the nenox steel that rubs me the wrong way a little bit.

Masamoto stainless are great all around knives in the kitchen once you get up to the 240 its got a great balance between sturdiness and finesse. the 210 is a little thin for my taste.
