Wvk14, for the money my choice would be the Kohetsu blue #2, 240mm Gyuto hands down, not to say the others are bad knives, but the Kohetsu is a real bargain for that good of a grind and steel at that price point. OOTB edge is good too, I think it would make a great gift.

Thanks for the advice. I'm going to go with the kohetsu. I'll make sure I bring my stone with me next time I'm down there so I can put a nasty edge on it

Yeah, I'd say between those choices the Kohetsu Blue #2 is the knife too. I did get it with lots of help from Steve and am really pleased with it. The Blue #2 is really easy to sharpen and keep sharp. The reactivity is not a problem. It patinas but does not rust so rusting isn't an issue.

It comes sharp but with a few swipes on a strop its even sharper and you can easily keep it sharp with just stropping for a very long time in between sharpenings.

Wow, knife looks great for the price! Can't believe how sharp it is OOTB, def will shave some hair. Really glad I went ahead and chose this one. Anywho, also looks like I might want to try a 240mm for work in the future.
