 Post subject: Thoughts and recommendations in knife upgrades.

Hello all,
I'm looking to upgrade my current crappy Hampton forge cutlery to some much finer blades.
For sharpening I have a WEPS outfitted with some Shapton stones.
The knives I'm looking at getting are the
JCK Inazuma 240 gyuto
Tojiro DP 120mm Petty
Fujiwara FKH 270mm Suji

Im also interested in the Artifex knives for the steel quality and the price. But for my Gyuto I want something kina flashy and pretty. But I'm very much open to any other suggestions if there's anything that's going to make me happier for similar price points. As I'm just a home cook wanting to get rid of my crappy bachelor days knives.

First... are you aware the FKH Fujiwara is a carbon blade?

Second, the Tojiro DP petty is a solid choice for a "home cook" looking for a bang-for-the-buck $50 Japanese petty.

Third, I hate to say it, but at the $139 price point the Inazuma lists at... I reckon, its gonna be hard to beat for a "home cook" that wants a "flashy" gyuto. I mean a 19c27 core laminated with a damascus finished secondary edge & heavy hammered finish up to the spine from the shinogi in nickel/stainless awase on an octagonal rosewood... its flashy, and flashy with some quality steel...

The Artifex that has been recommended to you:
- In 240mm you save $50, but you will need to pay for the "bling" with a handle. Still no damascus, for your "bling" though.
- It's much shorter. The Inazuma is 51mm tall, the artifex is 46mm... big difference in taste, if that shiite matters to you?
- The pictured Artifex w/handle already is a 210mm.
- It is AEB-L, which is a pro in its corner.

The Addict that has been recommended to you:
- It looks to have a longer belly, and is just overall a bigger knife. Only 1/2 cm taller, but from heel to tip - much more
steel. You might like that - you might not, but you have to think about it.
- It is CPM154, which is a pro in its corner.

Oh my you guys are making this hard for me. :)

Yeah I'm aware that the FKH is all carbon but I appreciate you looking out for me. I kinda figured that choosing a carbon suji would be a good step into the carbon world of kitchen knives especially since I will not use it all the time, and I know the girlfriend will be afraid of it and won't leave it in the sink.

I'm not dead set on buying a clad Damascus Gyuto, but they sure do look awfully pretty. :)
And that Artifex with the custom handle sure does look real sharp (pun intended), but to get a 240 with the nicer handle puts me into a whole nother price bracket which I don't completely mind as long as I can justify it to myself. But it also opens me up to a bunch more knives. Which I have kinda made a list of the ones I'm interested on that higher price range.

The Addict
The remedy (if still available?)
The konosuke HH
The Sugimoto wa gyuto
Sakai Takayuki Damascus
And the Tanaka Damascus.

Wow that's a lot if different options. While I'd prefer to try something with a WA handle, I'm not completely closed off to the idea of a YO handled knife either. Now I know that any one of these knives is going to be far and above anything I currently have I just want to make sure I'm getting the most for what I'm shelling out. The only real Japanese kitchen knife I have used is a Tojiro DP Sujihiki that we bought for my girlfriends dad for Christmas last year because he wanted a sushi knife, and he's left handed.
So are there any of these really worth the extra money? As in am I going to be getting a consideral amount of better knife for the extra $40 or so?

DAVID <> You said a 240 Artifex with a handle is gonna take you way out of your price point. Ask Mark how much to re-handle a $90 Artifex... you never know what the total would be.

Bare in mind, that Tanaka is a carbon.

The Inazuma
Takayuki
Addict
Artifex with a bling handle
Konosuke HH

Are there any of these I should stay away from or one or two that outshine the others?

If you have the coin I have yet to find a person that was unhappy with their Kono. There is a reason that they are all the rage on the forums as of late.
