i think i have made up my mind to get a Nakiri. I have these to select form,

and since this i my first japanese knife i dont what to look for to get at good knife, i want to learn how keep then sharp and use a stone. but no ide wish knife are the easy to use and how to handle after use.. is there a good videos a site to read about that...

the difference between the tojiros and the other 2 on your list is that the tojiros while great values and a trusted name, are essentially factory made knives, yoshiaki (kato) is known to be one of the finest craftsmen in all of japan see this video of maxims trip to visist him in his shop [youtube]http://youtu.be/TgtFgJR-U_E[/youtube]
he is one of the makers I have had on my list since I first heard of him and as soon as finances allow ill have one of his blades. ittonomon is also very well know for the quality of there work and I cant imagine that you would be disappointed by either.. not saying tojiros don't have there place but beside either of those makers there at opposite ends of the spectrum... the choice is yours, if you want a piece of history u will pay for it and have to take care of it.. if you simply want a decent preforming knife for your home, the tojiro will fit the position well too..

i think i going for Yoshiaki Fujiwara 180 mm from japanesenaturalstones since it the price all most the same..

well then i guess i need some kind on stone to keep it sharp.

is over kill to get a santoku at the same time.. ?
