Could you also give me some advice? I'm looking for a 210-240 mm suji/petty. My standard for great fit and finish is the Suisin Inox Honyaki, of which I bought a gyuto from you. But they're quite expensive and it would be nice to try out another brand. Can you tell me how the Richmond laser compares to the Suisin honyaki? For example, does it have a rounded spine and choil? How is the polishing? And how does the blade enter the handle, is there epoxy? (Nothing wrong with that as long as it's done properly - hygiene is important to me.) I know that it is your own design, so an honest answer would be appreciated :-).

Best regards,
Mark

Have a 210 Kono petty in white #2, man I love white steel! Love the patina it has and it get's crazy sharp. Have the Kono 240 HD2 gyuto, almost like stainless and holds a great edge. Anything from Kono will make you very happy!

Thanks guy's! I have a Kono 150 mm petty and it is a great knife. Fit and finish is also great, no complaints about this.

But I was wondering if there are sujihis with even better fit and finish. The Suisin Inox honyaki is my standard for this. Great polishing, great fit and finishing (very well psolishing, convex profily, as is possible for a thin knife like this and very good entry of the blade in the hande.)

So I was wondering if there are any better knifes in this area. I could go for another Suising Inox honyake, sind I know this is perfectini any respect. But the Knosuki is a great knife, just a bit less in fit and finish, and how does the Richmond laser compare to the Suisin and the Richmnond?

The Konosuke HD 210 is one of the knives that I've purchased from Mark.
It is a great knife and a bargain at the price.
