So this might make you cringe. Tried out my new kono hh suji today on a beautiful bone-in ham. Slicing along and felt a little resistance but nothing too bad. Get to the bottom of the cut and what's staring at me.... A perfectly severed bone about an inch diameter. The jaws of the people watching hit floor and said "oh my god that knife is sharp". Little did they know I was crying inside and wanting to get my 60x loupe to see the damage. No visible chips with the naked eye. Live and learn.

Maybe it was his finger but the knife was so sharp he just doesn't realize it yet. :mrgreen:

You probably hit cartilage bone would have stopped your knife and if it was nice and slow cooked while hard won't hurt it too bad :)

My first though was that this was a blood and stitches story also. Glad to hear it wasn't.

It is nice to know the knife performed admirably and wasn't damaged.
