can't edit … I meant to say that the Takeda was one my first *really nice* Japanese knives. Despite the fact that it's such a rustic finish, I always feel like I don't want to mess it up! I'm constantly yelling at my wife to wipe it down as she's using it :)

Yep, sent that to Jason as well. I decided to send him a batch of knives to see how sharp they could get, and to see how close I was getting to that. It was a mixed bag, I got close on the Takeda, but wow did he get the Fujiyama sharp as well. Ever since I got my knives back, I've been working to improve my technique - I really like his Artifex video (http://www.youtube.com/watch?v=XgOXvtJDm5E). I've watched that one a few times :) I feel like I can get a really nice edge on a long (270) blade now. I am probably still a little impatient, but working on it.

No, I started sharpening as a child and have practiced nearly every day sence that time. I joined blade forums in 2007 and shortly after I had people sending me knives for sharpening. To me sharpening is not a difficult task and is something that has always come naturally, but I quickly found out that is not the case for everyone else.

Even today I have a hard time calling myself a professional sharpener mainly because I never started calling myself that. I kinda fell into the position and eventually had to accept the title or stop accepting work.

It's something that started as a hobby and has turned into a adventure.
