For Double bevels Beston 500 - Gesshin 2000 - JNS Aoto/Gesshin 5000
For Single/Wide Bevels Beston 500 - King 800 - Green Brick if stainless clad - King Icebear 6000.

Soon to replace the King 6000 with either a Gesshin Jinzo Aoto, or a JNS synthetic red aoto.

Most J-knives: Nubatama Ume speckled (NUS) 1k, NUS 2k, 6k Arashiyama
Western knives: NUS 1k, Green Brick
Straight: NUS 1k, NUS 2k, (still ironing this part out either: 4k King Ice Bear, 8k Naniwa Superstone; or 6 Arashiyama), 15k Shapton Pro, 1 micron diamond on balsa, 1/2 micron diamond on balsa

This is something I have experimented with a lot.

For the past month, pretty much the same. 320 or 500 Shapton Glass if required, but often it is
1k Chosera, 5k Chosera with a light stropping on a 13k Sigma Power Select 2, very light.

Sadden, that is a beautiful finish, well done.

600 grit DMT, 1200 grit DMT, touch up with ceramic rod to remove burr, Green brick strop, 3 micron strop on balsa, 1 micron strop on balsa (optional). All that stropping gets any last burr out.

It's rare that I use the same progression twice. I have an abundance of choices and really need to know about the behavior of a wide number of stones, especially natural ones. I even revisit some stones I don't care for, just to see if my tastes have changed or to use them in a different way (eg regarding soaking) or on a different steel or with a difference in technique.

There's still a few synthetic stones I'd like to try that I haven't yet - just less and less.

I just got these stones: Shapton GS 500, 1K, 4K. I then strop using Bark River black then white compounds. I expect that I'll focus more on the 1K & 4K and strop in the future though. Green Brick for my Euro knives.

You don't need more than three stones - a coarse, a medium and a fine.

If I'm just touching up a established edge, then it's a fine stone, at the moment, a 6000.

Creating a new bevel, I start with a 400, then a 1000, ending with the 6000.
