I went with the Sakai Takayuki, came nice and sharp, also looks great. A small quality control issue (the ferrule is not even on both sides, one side is higher, closer to the blade than the other) but other than that I love the knife.

I guess it just lets me know that it was done by hand, although, I know plenty of guys that would not have missed the mistake...

and i noticed that you have the Premier 8" Chef knife. How do you like that one? i read a few reviews on it and a few said that it was too delicate. the tip broke off on some and was a little fragile. can you tell me how you like it? any problems? and keep in mind i use my knives everyday in the kitchens i work in and am trying to invest in a good quality chefs knife

I like the knife, I have used it from everything like cutting cakes, chopping up vegetables, and general dinner prep. It is not too fragile to me, however, if you are in need of a real work horse than can stand being thrown around on the counter (as I often see chefs do) this may not be the knife for you. However, the same knife in the Shun's Classic series is $169.99 I believe, so you can save $50 for the premier knife at cktk right now. I think it has a more attractive handle and the hammered look is nice too, although not adding to the function of the knife in any way, in my humble opinion.
