The oversized stone holder you chose is needed for stones that have a built in base... none of the stones you are looking at have one. The DMT plate is a premium plate that can be used as a sharpening "stone", as well, but is way overpriced to be used solely as a lapping plate. I am attaching below a more cost effective menu below that includes another lapping plate that can be used for chip repair, as well. Effective,

Regarding your Shapton concerns. I am not a fan of the Glass Stones as they offer zero feedback through the knife. Many argue they offer audible feedback which they do, but so do all stones; it seems foolish to limit the available feedback to just audio. They cut fast. They dish slow. I don't care; I liken the experience to what I imagine having sex with a robot would be like: cold, distant, boring, and disconnected. I like the Pros, but they are still hard stones that will gouge your edge before themselves so be aware and vigilant when employing them.
