Hi, trying to expand on the thread.

this guy has a channel with great videos showing technique, on dismantling and preparing fish in japanese kitchens.

fausto - those are really cool videos, I watch them all the time. I like the exposure to ingredients I've never used before. Great addition! Thanks.

I really like the Japanese Knife Society YT videos. Pretty accurate demonstrations of Japanese knife skills. Amongst some of the cleanest preparation videos I've found yet.

I LOVE Japanese knife society.

In the YT comments it says its a 210 Suisin INOX honyaki, with a Ho wood handle for improved grip.

Wow, I love that Saba breakdown video. I've just started to do fish at work and I really want to get this efficient and clean about it. I'll definitely be watching the rest of their videos, thanks atang!
