Fergie - a couple final thoughts for you:

I like the AEB-L steel in the Grand Cheff: http://www.chefknivestogo.com/satagrch24gy.html a bit better.

The Masamoto VG 240 is a bit taller at about 52mm. The POM handles on the VG are nearly indestructible.

Good points... Im going to have to ask Mark if I can order both to feel them(not use)...and hope he wont stick me with the restock fee...:)

But Im really liking everything, especially geometry wise, about the Grand Cheff

Dan - the Masamoto that Fergie is talking about is the SS VG model, not the carbon (i.e. KS or others). It is pretty similar to VG10 in terms of corrosion resistance IMHO - i.e. pretty resistant as far as J knives go.

Haha Steve. Its a negative of a fire. We had an old entertainment stand that would hold a tv and radio receiver etc. I lugged it outside and lit it up. That is one of the photographs of it that I took.
