Well, as many of you guys know I like my konosukes. How much? Well so far I've purchased: Kono white #2 210, 240 mm gyuto, 240mm suji, 240mm HD and as of sometime this afternoon I also own the blue #2 (sorry for those who wanted it :) and the white #1. I'm a happy knife nut haha.

@ peteszzahh: mine is the white # 2. It's really thin and light weight. But I've used it on damn near everything I'll normally use a gyuto for, (such as butternut squash to fish) It gets really sharp really quick and is fun to use. Only thing is a little difficult to chop onions since the blade height.

@ hos1109: The white #2 is my fav, (but so far HD is a close second due to the fact of little less care)

Thanks as well aaron.
I've heard nothing but great things about the white #2 but I'm switching to SS or semi stainless(pro kitchen,it's not the steel,it's me..)
Just wondering if the $85.00 difference is worth it (SS vs HD??)

which konosukes are you comparing where theres an $85 difference? the 270 and 300mm hd sujis are only $15-$30 more than white steel.

Up here in Toronto,Canada a Kono 270mm or 300mm SS suji w/rosewood handle is $288. all in
A KonoHD is $372. all in(13% tax) from a local purveyor.
Not complaining about the price(it is what it is) just curious if it's worth the price difference..

I have a Kono 240mm HD gyuto and a 150mm SS petty,love em both!

i prefer the HD over white steel kono just because the edge retention is better but it still sharpens up really easily. Sorry to hear about the drastic HD mark up.

Dont blame you! I own a HD gyuto 240mm and a white #2 honyaki 240 .. Both are superb knives! Konosuke is a very good knife indeed!
