Fuji(49mm) and Hiomoto(48mm) both may be a little short for your tastes.
You may want to consider the Richmond Sab instead if 250mm isn't too long for you. Comes the closest to your requirements so far 53mm tall, 7.2oz(lighter than both of the above options), comes in stainless or carbon and fits your price range ($100)

Cheffiec, I'm going by what other people have reported here in the forums. It's good to hear your experience with their SK4.

Durp, the FKH series uses SK4 carbon steel.

It depends on your budget. The kikuichi TKC is very highly recommended here. Nice semi stainless steel, great geometry, but it's much more expensive.

Thanks everyone for the help. Sorry I do not keep up with replies but I take all posts into consideration.

Ended up going with the Richmond SAB 250mm 52100. Seems to be EXACTLY what I need. Wouldnt have even known it existed without help of the forum.
