Hi Andrew,

For those that don't know the term, explain to guys what you mean by "staging". How did you go about getting your gigs?

A stage is basically a short term internship (as short as a day). You might be asked to do it when you are looking for a job, want to experience a specific kitchen or learn some new techniques from a kitchen etc.

You get them by asking. Send emails, call, show up ready to work, show up and ask to talk to the chef etc. That's the hard way. The easy way is having a connection that sets you up with the stage, but life doesn't always work out that way.

im currently staging at a restaurant too. its usually for no pay. i do it for experience

That's a little piece of art you made. I like the look of the half shucked peas in the pod in there. It's a nice little garnish for the dish.
