I might be working in san francisco, Chef about a restaurant. I think coming up with my second and my pastry chef.
But I do not know how they can claim. someone has an idea?

for information me it's 90K$ + bonus.

SIMON <> There is no standard pay in the USA. This is a capitalist country whereas a Proprietor can pay his staff whatever he'd like. It's totally dependent upon numbers. What's the restaurant grossing.?! How many heads you seat.?! What type of cuisine.?! What level of service.?! So many variables that can't be addressed in a quick text.

Check listings for similar restaurants in the same area. If the Chef is making $90k, you would most likely be offering in the range of $55k - $65k to the Sous. The Pastry Chef could be in the same range, but it really depends on how extensive a menu it is. It all depends on so many facets of the restaurant...

Your question is just too vague...

- 50-60 seat per service
- gourmet french cuisine with spanish insparation

I think do a 5 or 7 courses menu +/- 100$, 11 courses 140$

A lot of it has to do with how much the money is worth in the area. For example, the national average rent is a little over $900 a month--but in New York, it's $2800 a month, so the same pay would offer a totally different quality of life.

Most importantly, the pay is whatever the employees are happy to do the job for. Negotiate with them, you and they are the only ones this will effect.

Is it really $900 a month on average? Good grief. So glad I'm way below that average. My house payment is $356 a month for a 4 bed, 2 bath, garage, and pole barn on 2 acres. And that's a 17 year loan, not a 30. $2800 a month is just crazy talk. Silly New Yorkers.

It's rent. Rent should be going down, but people are only lending to those who already have money and good credit, so houses are still hard to get and rent is still high.

That is a really good payment though, still.
