Again, and I know there is no voice inflection amid text, but Ginsanko is a type of steel. The Fujiyama line of Konosuke knives are offered in White #1, #2, & Blue #2 steels.
Furthermore, you asked how much a 240 would be. A 240 what (i.e., gyuto, usuba, yanagi, etc.)? I had suggested you contact Mark about a custom fabrication because if you must have a knife fabricated by the Fujiyama blacksmith, maybe said blacksmith will work with the stainless steel on a one-off custom basis. I will add, I have heard that particular gentleman is pretty overwhelmed with production right now, but you never know until you ask...
