Anyone know of a good reference manual or a book about Japanese natural stones that includes characteristics as well as histories of the different mines techniques etc... I searched and didn't really come up with much. I find all of it very interesting.

It's interesting all right! I've never seen a definitive book on it, but there is some good info on the Web.

A web site with information on the various Japanese Natural stones would be wonderful. I haven't seen any organized information anywhere either.

This is one of the good set of links:
http://www.japanesenaturalstones.com/jns-wiki/
http://japanesenaturalstones.blogspot.c ... guide.html

Maybe Ken Schwartz can help us out with some descriptions and stuff, too?

Yes, it's fun to talk to ken about this stuff. Unfortunately, I can't put him on my shelf ;) if someone would produce a book like this, with high quality pictures, attributes and history I would buy it. If I had the knowledge on this subject and the resources and the time to gather all of this stuff, I would do it. I think you'd sell A LOT of copies.
