Nice pile of shrimp, and the croquettes look like they are coated in corn flakes lol! Ahhh good old corn flake chicken.

The "croquettes" are actually jalapeno poppers.....

Fish is kingklip.

Hollow out jalapenos, stuff it with cream cheese & crumb it - then deep fry till crispy golden brown.....during this preparation process copious amounts of rum consumed is essential....so even if the dish flops, it looks good & fills the hunger pains........

I make large quantities at a sitting, then freeze it, just to pop into the deep fryer when needed....again plenty of rum involved of course....
