This is a greatly simplified version of a question that Mark kindly posted for me on the Knife Recommendation subforum. I am right handed and have no concerns about either of these steels, but would prefer not to deal with M390 or CPM 154 as yet. I would like to try a wa handle and am open to other suggestions (e.g., Konosuke HD).

Thank you,

Richard

The big difference between these two knives is my Laser is stainless (Aeb-L) and the Konosuke is carbon (White #2).

My knife has a better handle.

The konosuke is a little thicker.

Unless you decide you absolutely want a carbon blade, I would highly suggest getting a blade made with stainless. Particularly if you are working in a professional environment. In which case you would be looking at the Konosuke HH, not the HD. Also, don't ignore the Sakai Takayuki Grand Chef as an option. http://www.chefknivestogo.com/wagyuto.html

On a somewhat related note, don't rule out CPM 154. I bought Mark's Addict 2 and the edge retention on that steel is pretty damn impressive.

RICHARD <> Like Mark states, you're comparing apples to oranges. Ones a 'laser," the other is not. One's stainless, the other is not. They're such different knives, I don't really know what type of suggestion you're looking for. :|

dont let carbon scare you. all you need to do is clean it with a damp towel and wipe dry after use(the same thing you SHOULD already be doing with stainless steel). konosuke fujiyamas are great knives and aeb-l is also great steel, i havent tried a richmond laser yet though. Its pretty impossible to recommend one over the other without knowing alittle bit more about yourself.

Thanks to all. I am a home cook. I am not concerned about caring for carbon, but do not want to sharpen CPM 154 or M390--hence carbon or semi-stainless and why I threw in the HD.

You can't go wrong with either the Kono HD, White #2, or Richmond Laser. All 3 of them rock socks and are easy to sharpen.

RICHARD <> Awesome! Let us know your first impression, and then an update after you have gone through a considerable amount of product.
