I think this knife is going to be really popular. I had my shop do a simple western handled, no bolster, 210mm gyuto in blue #2 steel that is priced for line cooks (which is one of our key markets). They're going to make killer line knives and with a price under $100 I think they're going to fly.

We should have these on Monday if they clear customs quickly. I'll do a brief write up and give you a link when I get to work.

Nice job. The sub $100 market seems a bit underserved by quality cutlery around here for cooks looking for no nonsense tools to help them do their jobs more efficiently.

And as noted recently, Hitachi carbon monosteel knives are not all over the place, especially not at a reasonable price point. That sounds likely to be a hit.

Sorry. This one is aogami #2 on the core and stainless clad. It should have a similar look on the blade to the Kohetsu AS knives we have on the site, just with a simple western handle. If they're popular I'll add some more but no others are on order yet.

We're only getting 85 of these on the first order so I hope they last more than a couple days.

Is the grind fairly similar to the kohetsu 210? I have a coworker who adores my AS 210mm

I won't know for sure until I get them but they should have similar grinds. The same guys are making them.
