Ok, now that the 240mm Gyuto/French Chef Artifex has hit the street, I want to poll you guys about the next knife type to make under this line.

I'm going with the Nakiri. Why? Because I have a Dexter Russell Chinese 'cleaver' promoted by Joyce Chen that is stainless, and half height. So it's a Nakiri with a Chinese handle. It sucks. It was cheap. I have it to test and abuse.

My wife uses the stupid thing all the time! I gave her my Tojiro DP, and I moved it to a tiny corner of the kitchen. There is a CCK on the wall. A Shig next to it. A homemade knife next to it. A plethora of better alternatives. She won't stop using it! I find it out on the counter all the time!!

The worst thing is, SHE WON'T TELL ME WHY. I NEED TO KNOW. What the heck is so alluring about that stupid little Nakiri wannabe?? She just says "I don't know." She doesn't even claim to like it!!

She says "I can leave it dirty and know it won't bother you", which is true, but my DP is just as stainless and dirty knives are just as disgusting either way.


SO. Provide for crazies like my wife. Do the Nakiri. I rest my case.

My take is that women don't care about tools. they just want it done, even if it's a it slower. Men may take many more hour to perfect their tools so that they can do the job in slightly less time.

I'm going with the nakiri as well. It's a knife I would love to own but would be more likely to buy at the artifex price point.

definitely the cleaver are you kidding me if you don't want a cleaver you don't know about a cleaver. I only really need three knives a petty a 240 and a cleaver, everything else is just fun

Hmmm. I don't know?? Would it be possible to get a Western style fillet knife or Boning Knife in AEB-L?? I have pettys I ararely use, 3 Nakiri's, 2 yanagiba's and 1 Suji incoming soon, a Honesuki I never use and I haven't tried a cleaver, but I would spring for a 52100 Fanatic if I was going to a cleaver. I would love to see a good steel 7-9" fillet knife or a 6-7" boning knife, though!! I would buy a few of each!
